Description

These Easy Spicy Gochujang Ramen Noodles are chewy, savory, and delightfully spicy, infused with bold Korean flavors. Made with a quick gochujang sauce blended with garlic, sesame, and a touch of sweetness, this dish is a perfect, flavorful meal ready in just minutes, ideal for a satisfying and speedy dinner.

Ingredients

Noodles

  • 2 packages instant ramen noodles, seasoning packets discarded

Sauce

  • 2 tablespoons gochujang
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes, optional
  • 2 tablespoons reserved noodle water

Garnish

  • 2 green onions, sliced
  • 1 teaspoon sesame seeds

Instructions

  1. Cook Noodles: Cook the ramen noodles according to the package directions until just tender. Be sure to reserve 2 tablespoons of the cooking water before draining the noodles.
  2. Prepare Sauce: In a small bowl, whisk together the gochujang, soy sauce, sesame oil, rice vinegar, honey (or maple syrup), minced garlic, grated fresh ginger, and red pepper flakes if using. This mixture forms the flavorful gochujang sauce.
  3. Heat Skillet: Place a skillet on medium heat to warm it up for the next step.
  4. Toss Noodles with Sauce: Add the cooked noodles and the prepared gochujang sauce to the skillet. Toss them well to combine evenly.
  5. Adjust Sauce Consistency: Gradually add the reserved noodle water a little at a time while tossing, to loosen the sauce and help it coat the noodles thoroughly.
  6. Heat Through: Cook the noodles and sauce together in the skillet for 1 to 2 minutes until heated through and well coated.
  7. Garnish and Serve: Remove from heat, garnish with the sliced green onions and sesame seeds, and serve immediately for the best flavor and texture.

Notes

  • Adjust the amount of gochujang to tailor the spice level to your preference.
  • Additions like a fried egg, shredded chicken, tofu, or fresh vegetables can make this meal more filling and nutritious.
  • Use gluten-free noodles and tamari in place of soy sauce to accommodate gluten sensitivities.
  • Gochujang varies by brand due to fermented ingredients, so spice and sweetness levels may change; taste and adjust accordingly.
