Description

This fun and easy Eggo breakfast pizza uses toasted waffles as the crust and is topped with fluffy scrambled eggs, melted cheddar cheese, crispy turkey bacon, and fresh green onions. Perfect for busy mornings, brunch, or a kid-friendly breakfast that can be made in under 20 minutes.

Ingredients

Waffle Base

  • 4 frozen waffles (Eggo-style)

Toppings

  • 4 large eggs
  • ½ cup (50g) shredded cheddar cheese
  • 4 slices cooked turkey bacon or regular bacon, chopped
  • 2 tbsp chopped green onions
  • Salt and pepper to taste

Instructions

  1. Toast Waffles: Toast the frozen waffles according to the package directions until they are golden and slightly crispy. This will serve as the pizza crust for the breakfast pizza.
  2. Preheat Oven: While the waffles are toasting, preheat your oven to 400°F (200°C) to prepare for melting the cheese and warming the toppings.
  3. Arrange Waffles: Place the toasted waffles evenly spaced on a baking sheet to prepare for adding the toppings.
  4. Scramble Eggs: In a skillet over medium heat, scramble the eggs seasoning with salt and pepper, cooking just until set but still moist and fluffy.
  5. Add Toppings: Evenly divide the scrambled eggs over each waffle. Then sprinkle each with shredded cheddar cheese and chopped cooked bacon.
  6. Bake: Bake the assembled waffles in the preheated oven for 5–7 minutes or until the cheese is fully melted and bubbling.
  7. Garnish and Serve: Remove from the oven and sprinkle chopped green onions over the top. Serve immediately for a warm, savory breakfast treat.

Notes

  • Add diced bell peppers or spinach for extra vegetables and nutrients.
  • Swap bacon for sausage if you prefer a different breakfast meat.
