- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup green beans, chopped into bite-sized pieces

- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
Finishing Touches
- 1/4 cup Parmesan cheese, grated (optional)
- Fresh parsley or basil, chopped (for garnish)
Instructions
- Brown the Ground Beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
- Sauté Aromatics: Add diced onion and minced garlic to the skillet. Cook for 2–3 minutes until softened and fragrant.
- Cook Vegetables: Stir in zucchini, yellow squash, red bell pepper, green beans, and corn kernels. Cook for 6–8 minutes, stirring occasionally, until vegetables are tender.
- Add Tomatoes and Seasonings: Add halved cherry tomatoes, Italian seasoning, paprika, salt, and black pepper. Stir and cook for another 2–3 minutes until tomatoes soften.
- Finish and Garnish: Sprinkle with grated Parmesan cheese if using, and garnish with fresh chopped parsley or basil before serving.
Notes
- Swap in whatever veggies you have on hand, such as mushrooms, carrots, or spinach for variety.
- Serve over rice, quinoa, or pasta to make the meal more filling.
