Seasonings & Oils

  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper

Finishing Touches

  • 1/4 cup Parmesan cheese, grated (optional)
  • Fresh parsley or basil, chopped (for garnish)


Instructions

  1. Brown the Ground Beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
  2. Sauté Aromatics: Add diced onion and minced garlic to the skillet. Cook for 2–3 minutes until softened and fragrant.
  3. Cook Vegetables: Stir in zucchini, yellow squash, red bell pepper, green beans, and corn kernels. Cook for 6–8 minutes, stirring occasionally, until vegetables are tender.
  4. Add Tomatoes and Seasonings: Add halved cherry tomatoes, Italian seasoning, paprika, salt, and black pepper. Stir and cook for another 2–3 minutes until tomatoes soften.
  5. Finish and Garnish: Sprinkle with grated Parmesan cheese if using, and garnish with fresh chopped parsley or basil before serving.
