Description

This Garlic Butter Creamed Corn Chicken is a rich and comforting one-pan skillet meal featuring tender, juicy chicken breasts or thighs cooked in a creamy garlic butter sauce with sweet corn and Parmesan cheese. Perfect for a cozy dinner, it pairs beautifully with rice, pasta, mashed potatoes, or crusty bread for a satisfying family-friendly meal.

Ingredients

Chicken

  • 1 1/2 lbs (680 g) boneless, skinless chicken breasts or thighs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika

Cooking Fat

  • 2 tablespoons butter
  • 1 tablespoon olive oil

Sauce and Vegetables

  • 4 garlic cloves, minced
  • 2 cups corn kernels, fresh or frozen
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season chicken: Season the chicken breasts or thighs evenly with salt, black pepper, and smoked paprika to build the base flavor for the dish.
  2. Cook chicken: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken and cook for 5 to 7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and place it on a plate to rest.
  3. Cook corn: Add the remaining tablespoon of butter and the corn kernels to the same skillet. Cook for 3 to 4 minutes until the corn starts to brown slightly, enhancing its sweetness and flavor.
  4. Sauté garlic: Add the minced garlic to the skillet with the corn and cook for 30 seconds, stirring frequently to release the garlic’s aroma without burning it.
  5. Add broth: Pour in the chicken broth and use a wooden spoon or spatula to scrape up any browned bits stuck to the bottom of the pan, adding depth and flavor to the sauce.
  6. Add cream and seasoning: Stir in the heavy cream and Italian seasoning. Allow the mixture to simmer gently for 3 to 4 minutes so the sauce thickens slightly and flavors meld.
  7. Add Parmesan cheese: Mix in the grated Parmesan cheese until the sauce becomes creamy, rich, and slightly thickened.
  8. Return chicken: Place the cooked chicken back into the skillet, spooning the sauce over the pieces. Let it cook for another 2 to 3 minutes to warm through and let the chicken soak up some sauce.
  9. Garnish and serve: Sprinkle the freshly chopped parsley over the dish before serving. Serve this creamy, garlicky chicken warm with your choice of rice, mashed potatoes, pasta, or crusty bread.

Notes

  • Chicken thighs provide extra juiciness and flavor compared to breasts.
  • Add spinach or chopped bell peppers to the sauce for additional vegetables and color.
  • For a lighter sauce, substitute half-and-half for the heavy cream.
  • This dish pairs wonderfully with rice, mashed potatoes, pasta, or crusty bread to soak up the creamy sauce.
