Instructions
- Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the diced onion and carrots, sautéing until the onion is translucent and the carrots begin to soften, about 5 minutes.
- Add Potatoes and Broth: Stir in the peeled and cubed potatoes, vegetable broth, and marjoram. Bring the mixture to a boil, then reduce heat to a simmer.
- Simmer: Let the soup simmer gently for about 20 minutes or until the potatoes are tender when pierced with a fork.
- Mash Potatoes: Using a potato masher, mash about half of the potatoes directly in the pot to create a creamy consistency while retaining some chunkiness for texture.
- Finish and Garnish: Stir in the cream to enrich the soup. Adjust seasoning if needed. Serve hot, garnished with fresh parsley for a bright, fresh flavor.
