Description

A comforting and creamy German Potato Soup (Kartoffelsuppe) featuring tender potatoes and vegetables simmered with aromatic herbs, finished with a touch of cream and fresh parsley for a rustic and flavorful dish.

Ingredients

Vegetables

  • 1 onion, diced
  • 3 carrots, diced
  • 2 lbs potatoes, peeled & cubed

Liquids & Dairy

  • 6 cups vegetable broth
  • 1/2 cup cream

Seasonings & Fats

  • 2 tbsp butter
  • 1 tsp marjoram
  • Fresh parsley, for garnish

Instructions

  1. Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the diced onion and carrots, sautéing until the onion is translucent and the carrots begin to soften, about 5 minutes.
  2. Add Potatoes and Broth: Stir in the peeled and cubed potatoes, vegetable broth, and marjoram. Bring the mixture to a boil, then reduce heat to a simmer.
  3. Simmer: Let the soup simmer gently for about 20 minutes or until the potatoes are tender when pierced with a fork.
  4. Mash Potatoes: Using a potato masher, mash about half of the potatoes directly in the pot to create a creamy consistency while retaining some chunkiness for texture.
  5. Finish and Garnish: Stir in the cream to enrich the soup. Adjust seasoning if needed. Serve hot, garnished with fresh parsley for a bright, fresh flavor.

Notes

  • For a vegetarian version, ensure vegetable broth is used.
  • You can substitute cream with a plant-based alternative to make it dairy-free.
  • Adjust marjoram quantity to taste for a stronger herb flavor.
  • Serve with crusty bread for a complete meal.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated gently on the stovetop.
