- 3 cups chopped green cabbage

- 1/2 avocado
- 1/4 cup green onions, chopped
- 1/3 cup pumpkin seeds
Green Goddess Dressing
- 1/2 avocado
- 1/3 cup Greek yogurt
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 garlic clove
- 1/4 cup fresh parsley
- 2 tbsp fresh basil
- 1 tbsp chives
- 2–3 tbsp water
- Salt and black pepper, to taste
Instructions
- Prepare the Salad: In a large mixing bowl, combine the chopped green cabbage, romaine lettuce, diced cucumber, fresh parsley, chives, basil, chopped green onions, and pumpkin seeds. Toss gently to mix the ingredients evenly.
- Make the Dressing: Place the avocado, Greek yogurt, olive oil, lemon juice, garlic clove, fresh parsley, basil, and chives into a blender or food processor. Blend until the mixture is smooth and creamy.
- Adjust Consistency: Gradually add 2 to 3 tablespoons of water to the dressing, blending further if needed, until the dressing reaches your preferred consistency—smooth but pourable.
- Toss the Salad: Pour the creamy green goddess dressing over the salad mixture. Toss thoroughly until all vegetables and herbs are evenly coated with the dressing.
- Serve: Serve the salad immediately for the freshest texture and flavor.
