For the Chimichurri

- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare the marinade: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, salt, and black pepper, mixing thoroughly to create the marinade.
- Marinate the chicken: Add the chicken breasts or thighs to the marinade and toss well to coat each piece evenly. Cover the bowl and refrigerate the chicken for at least 30 minutes to allow flavors to penetrate.
