Description

A vibrant and flavorful grilled chicken recipe featuring a tropical marinade made with mango and pineapple, delivering a perfect balance of sweet and savory flavors. This dish is ideal for summer barbecues or a light, refreshing dinner.

Ingredients

For the Marinade

  • 1 cup fresh mango, peeled and diced
  • 1 cup fresh pineapple, peeled and diced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • Salt to taste

For the Chicken

  • 4 boneless, skinless chicken breasts
  • Cooking spray or additional olive oil for grilling

Instructions

  1. Prepare the Marinade: In a blender or food processor, combine diced mango, pineapple, garlic, soy sauce, olive oil, honey, lime juice, ground ginger, black pepper, and salt. Blend until smooth to create a tropical marinade.
  2. Marinate the Chicken: Place the chicken breasts in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight to allow flavors to infuse.
  3. Preheat the Grill: Heat your grill to medium-high heat. Lightly oil the grill grates or spray with cooking spray to prevent sticking.
  4. Grill the Chicken: Remove chicken from the marinade, letting excess drip off. Place the chicken breasts onto the grill. Cook for 6-7 minutes per side, or until an internal temperature of 165°F (74°C) is reached and the chicken is cooked through with nice grill marks.
  5. Rest and Serve: Remove the chicken from the grill and let it rest for 5 minutes before slicing. This step helps retain juices and enhances flavor. Serve the grilled mango pineapple chicken with your favorite side dishes for a tropical-inspired meal.

Notes

  • Marinate the chicken overnight for the most intense flavor infusion.
  • If fresh mango and pineapple are unavailable, use canned fruit packed in juice, drained well.
  • To keep the chicken moist, avoid flipping too frequently on the grill.
  • Adjust the sweetness by adding more or less honey according to taste.
  • The marinade doubles as a basting sauce during grilling if reserved separately before contact with raw chicken.
