Description

Grilled Picnic Taco Nachos are a delicious and fun outdoor twist on classic nachos. Layered with crunchy tortilla chips, seasoned ground beef, melted cheddar and Monterey Jack cheese, black beans, corn, and fresh toppings, these nachos cook together on the grill for an easy, shareable appetizer or picnic meal perfect for casual gatherings or camping.

Ingredients

Main Ingredients

  • 8 oz tortilla chips
  • 1 lb ground beef
  • 1 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup black beans, drained and rinsed
  • ½ cup corn
  • ½ cup diced tomatoes
  • ¼ cup sliced jalapeños
  • ¼ cup diced red onion
  • 2 green onions, sliced
  • ¼ cup chopped fresh cilantro

For Serving

  • Sour cream
  • Guacamole
  • Salsa
  • Lime wedges

Instructions

  1. Preheat the Grill: Preheat your grill to medium heat, approximately 375–400°F (190–200°C), ensuring it’s ready for cooking the nachos evenly.
  2. Cook the Ground Beef: In a skillet over medium heat, cook the ground beef until fully browned. Drain any excess grease, then stir in the taco seasoning until well mixed and fragrant.
  3. Prepare the Foil Base: Lay out a large sheet of heavy-duty aluminum foil on a flat surface to form the base of your nacho packet.
  4. Layer the Ingredients: Spread a layer of tortilla chips in the center of the foil. Sprinkle some of the seasoned taco meat over the chips, followed by cheddar and Monterey Jack cheeses, black beans, corn, diced tomatoes, jalapeños, and diced red onion.
  5. Repeat Layers: Continue layering the remaining ingredients similarly, topping the final layer generously with cheese to ensure great melting.
  6. Seal the Packet: Carefully fold the foil over the layered ingredients, creating a sealed pouch that leaves enough space inside for the cheese to melt and ingredients to heat through.
  7. Grill the Nachos: Place the foil packet on the preheated grill. Cook for 8–12 minutes until the cheese is fully melted and the nachos are hot throughout.
  8. Serve the Nachos: Using caution, open the foil packet to avoid hot steam. Sprinkle the top with sliced green onions and chopped fresh cilantro for freshness.
  9. Accompany and Enjoy: Serve immediately with sides of sour cream, guacamole, salsa, and lime wedges to customize your nacho experience.

Notes

  • Use heavy-duty aluminum foil to prevent tearing while grilling.
  • For a vegetarian version, omit the beef and add extra black beans, pinto beans, or grilled vegetables.
  • Try swapping in cooked chicken or pulled pork for a different protein twist.
  • Delicate toppings like avocado, sour cream, and cilantro should be added after grilling to maintain freshness and texture.
