Description

Sweet grilled pineapple and smoky tofu kebabs threaded with colorful bell peppers and red onion create a vibrant and flavorful vegan dish perfect for summer barbecues or easy weeknight dinners. This recipe combines the natural sweetness of pineapple with a savory, spiced tofu marinade, all cooked to perfection over the grill for a deliciously charred finish.

Ingredients

Tofu and Marinade

  • 14 oz (400 g) extra-firm tofu, pressed and cubed
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder

Vegetables and Fruit

  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into chunks

Other

  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade: In a bowl, whisk together the olive oil, soy sauce, maple syrup, smoked paprika, and garlic powder until well combined, creating a flavorful marinade that will infuse the tofu with smoky and sweet notes.
  2. Marinate the Tofu: Toss the cubed, pressed tofu in the marinade, ensuring each piece is evenly coated. Let the tofu sit in the marinade for 20 minutes to absorb the flavors deeply.
  3. Assemble the Kebabs: Thread the marinated tofu cubes, pineapple chunks, chopped red and yellow bell peppers, and red onion chunks alternately onto wooden or metal skewers, creating colorful and balanced kebabs.
  4. Preheat the Grill: Heat the grill to medium-high. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning during cooking.
  5. Grill the Kebabs: Place the skewers on the preheated grill and cook for 10 to 12 minutes, turning occasionally to ensure even charring. Grill until the vegetables are tender and the tofu is lightly charred with grill marks.
  6. Serve: Remove the kebabs from the grill and serve warm, pairing nicely with rice or additional grilled vegetables for a complete meal.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to avoid burning.
  • Feel free to add other vegetables such as zucchini or mushrooms for more variety and nutrition.
  • Brush the kebabs with extra marinade during grilling to enhance flavor and moisture.
