Ingredients

For the Shrimp

  • 1 1/2 lbs (680 g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 garlic cloves, minced
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Tacos

  • 12 small corn or flour tortillas
  • 2 cups shredded cabbage
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red onion, thinly sliced
  • Lime wedges, for serving

Creamy Lime Sauce

  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt

Instructions

  1. Marinate the shrimp: Place the shrimp in a large bowl and add olive oil, lime juice, minced garlic, chili powder, smoked paprika, cumin, garlic powder, salt, and black pepper. Toss until the shrimp are evenly coated. Cover and refrigerate for 15–30 minutes to infuse the flavors.
  2. Prepare the creamy lime sauce: In a small bowl, whisk together the sour cream or Greek yogurt, fresh lime juice, honey, chili powder, and salt. Refrigerate until ready to use, allowing the flavors to meld.
  3. Preheat the grill: Heat the grill to medium-high and lightly oil the grates to prevent sticking and ensure beautiful grill marks on the shrimp.
  4. Skewer the shrimp: Thread the marinated shrimp onto skewers if desired to make grilling easier and to keep them uniform while cooking.
  5. Grill the shrimp: Place the shrimp on the grill and cook for about 2–3 minutes per side, until the shrimp turn pink, become opaque, and develop a light char. Remove from the grill promptly to avoid overcooking.
  6. Warm the tortillas: Place the tortillas on the grill for 20–30 seconds per side until warm and pliable, ready to be filled.
  7. Assemble the tacos: Fill each warmed tortilla with a layer of shredded cabbage, then top with grilled shrimp. Add avocado slices, red onion, and chopped cilantro for freshness and texture.
  8. Add creamy lime sauce and serve: Drizzle the creamy lime sauce over the tacos, garnish with fresh lime wedges, and serve immediately for the best taste and texture.

Notes

  • Use large or jumbo shrimp for easier grilling and better texture.
  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  • Avoid overcooking the shrimp as they cook very quickly and can become rubbery.
  • Add jalapeño, pico de gallo, or mango salsa for extra flavor and variety.
  • For a lighter option, substitute Greek yogurt for sour cream in the creamy lime sauce.
