Ingredients
For the Vegetables
- 1 zucchini, sliced lengthwise
- 1 yellow squash, sliced lengthwise
- 1 red bell pepper, cut into large pieces
- 1 yellow bell pepper, cut into large pieces
- 1 small red onion, cut into wedges
- 8 oz mushrooms, halved
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
For Serving
- 1½ cups hummus
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon extra-virgin olive oil
- Lemon wedges
- Warm pita bread, optional
Instructions
- Preheat the grill: Heat your grill to medium-high, approximately 400–425°F, to ensure it is hot enough to char the vegetables while cooking them evenly.
- Prepare the vegetables: In a large bowl, combine zucchini, yellow squash, red and yellow bell peppers, red onion, and mushrooms. Drizzle with olive oil and sprinkle oregano, smoked paprika, garlic powder, salt, and black pepper. Toss thoroughly to evenly coat all pieces.
- Grill the vegetables: Arrange the vegetables on the grill using grill grates or a basket for smaller pieces. Cook for 3 to 5 minutes per side, turning them to achieve a light char and tenderness without overcooking.
- Assemble the platter: Transfer the grilled vegetables to a large serving platter, arranging them attractively. Spoon the hummus into a serving bowl or spread directly onto the platter beside the vegetables.
- Garnish and serve: Drizzle the hummus with extra-virgin olive oil and sprinkle the fresh parsley over the vegetables. Serve the platter warm or at room temperature with lemon wedges and optional warm pita bread on the side.
Notes
- For variety, add eggplant, asparagus, cherry tomatoes, or corn to the grilled vegetable selection.
- Cut all vegetables into similar sizes to ensure even cooking on the grill.
- Use a grill basket when grilling smaller vegetables like mushrooms to prevent them from falling through the grates.
- Add crumbled feta cheese or olives to the platter to enhance the traditional Mediterranean flavors.
- Grilled vegetables can be prepared several hours in advance and served at room temperature for convenience.
