Description

This hearty Ground Beef and Tomato Soup combines savory ground beef with tender vegetables and rich crushed tomatoes to create a comforting and flavorful meal. Perfect for chilly evenings, this family-friendly soup is simple to make and satisfying to eat.

Ingredients

Meats and Oils

  • 1 lb ground beef
  • 1 tbsp olive oil

Vegetables

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • Fresh parsley, chopped, for garnish

Liquids and Canned Goods

  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef broth

Spices and Seasonings

  • 1 tsp Italian seasoning
  • ½ tsp dried basil
  • Salt and black pepper, to taste

Instructions

  1. Heat the oil: In a large soup pot over medium heat, heat 1 tablespoon of olive oil to prepare for sautéing the vegetables.
  2. Sauté vegetables: Add the diced onion, carrots, and celery to the pot and cook for about 5 minutes until the vegetables soften and become fragrant.
  3. Add garlic: Stir in the minced garlic and cook for 30 seconds to release its aroma without burning.
  4. Brown the beef: Add the ground beef to the pot. Cook it thoroughly, breaking it apart with a spoon, until it is nicely browned all over.
  5. Drain fat: If there is excess fat released by the beef, carefully drain it from the pot to keep the soup from becoming greasy.
  6. Add liquids and seasoning: Stir in the crushed tomatoes, beef broth, Italian seasoning, and dried basil. Mix well to combine all the flavors.
  7. Simmer the soup: Bring the soup mixture to a boil, then reduce the heat to low and let it simmer gently for 25 to 30 minutes to allow the flavors to meld and the vegetables to tenderize.
  8. Season to taste: Add salt and black pepper according to your preference to enhance the flavor.
  9. Serve: Garnish the soup with freshly chopped parsley and serve warm, enjoying a cozy and satisfying meal.

Notes

  • For a heartier soup, add cooked pasta or rice during the last 5 minutes of simmering.
  • Leftover soup can be frozen for up to 3 months in an airtight container.
  • Serve with crusty bread or grilled cheese sandwiches to make a complete meal.
