Ingredients
Meats and Oils
- 1 lb ground beef
- 1 tbsp olive oil
Vegetables
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- Fresh parsley, chopped, for garnish
Liquids and Canned Goods
- 1 (28 oz) can crushed tomatoes
- 4 cups beef broth
Spices and Seasonings
- 1 tsp Italian seasoning
- ½ tsp dried basil
- Salt and black pepper, to taste
Instructions
- Heat the oil: In a large soup pot over medium heat, heat 1 tablespoon of olive oil to prepare for sautéing the vegetables.
- Sauté vegetables: Add the diced onion, carrots, and celery to the pot and cook for about 5 minutes until the vegetables soften and become fragrant.
- Add garlic: Stir in the minced garlic and cook for 30 seconds to release its aroma without burning.
- Brown the beef: Add the ground beef to the pot. Cook it thoroughly, breaking it apart with a spoon, until it is nicely browned all over.
- Drain fat: If there is excess fat released by the beef, carefully drain it from the pot to keep the soup from becoming greasy.
- Add liquids and seasoning: Stir in the crushed tomatoes, beef broth, Italian seasoning, and dried basil. Mix well to combine all the flavors.
- Simmer the soup: Bring the soup mixture to a boil, then reduce the heat to low and let it simmer gently for 25 to 30 minutes to allow the flavors to meld and the vegetables to tenderize.
- Season to taste: Add salt and black pepper according to your preference to enhance the flavor.
- Serve: Garnish the soup with freshly chopped parsley and serve warm, enjoying a cozy and satisfying meal.
Notes
- For a heartier soup, add cooked pasta or rice during the last 5 minutes of simmering.
