Ingredients

For the Salad

  • 2 cups cooked chicken breast, diced or shredded

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced

For the Lemon-Dijon Dressing

  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 garlic clove, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt


Instructions

  1. Prepare the Beans: Add the chickpeas and cannellini beans to a large bowl and rinse or drain them thoroughly to remove any excess liquid.
  2. Combine Salad Ingredients: Add the cooked chicken, cherry tomatoes, cucumber, red bell pepper, red onion, parsley, basil, feta cheese (if using), and diced avocado to the bowl with the beans.
  3. Make the Dressing: In a small bowl, whisk together the extra-virgin olive oil, fresh lemon juice, red wine vinegar, Dijon mustard, honey, minced garlic, dried oregano, salt, and black pepper until well combined.
  4. Toss the Salad: Pour the dressing over the salad ingredients and gently toss everything together until all components are evenly coated with the dressing.
