- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/3 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup crumbled feta cheese (optional)
- 1 avocado, diced

For the Lemon-Dijon Dressing
- 1/4 cup extra-virgin olive oil
- 3 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey or maple syrup
- 1 garlic clove, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- Prepare the Beans: Add the chickpeas and cannellini beans to a large bowl and rinse or drain them thoroughly to remove any excess liquid.
- Combine Salad Ingredients: Add the cooked chicken, cherry tomatoes, cucumber, red bell pepper, red onion, parsley, basil, feta cheese (if using), and diced avocado to the bowl with the beans.
- Make the Dressing: In a small bowl, whisk together the extra-virgin olive oil, fresh lemon juice, red wine vinegar, Dijon mustard, honey, minced garlic, dried oregano, salt, and black pepper until well combined.
- Toss the Salad: Pour the dressing over the salad ingredients and gently toss everything together until all components are evenly coated with the dressing.
- Adjust Seasoning: Taste the salad and adjust the seasoning by adding more lemon juice, salt, or black pepper as desired.
- Chill and Serve: Let the salad rest in the refrigerator for 15–20 minutes before serving to allow the flavors to meld together. Serve chilled or at room temperature.
