Ingredients
Base
- 1 cup cottage cheese
- 1 cup plain Greek yogurt
- 1 packet (1 oz) ranch seasoning mix
Add-Ins
- 1 can (10 oz) Rotel diced tomatoes and green chiles, drained
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped green onions
- 2 tablespoons chopped fresh cilantro, optional
Serving
- Tortilla chips, crackers, or fresh vegetables, for serving
Instructions
- Blend Base Ingredients: Add the cottage cheese, Greek yogurt, and ranch seasoning to a food processor or blender. Blend until the mixture is smooth and creamy, ensuring the ranch seasoning is well incorporated.
- Combine Ingredients: Transfer the blended mixture to a large bowl. Gently fold in the drained Rotel diced tomatoes and green chiles, shredded cheddar cheese, chopped green onions, and optional cilantro, mixing until evenly distributed.
- Chill the Dip: Refrigerate the dip for at least 30 minutes to allow the flavors to meld and the dip to chill thoroughly.
- Serve: Serve the dip cold alongside tortilla chips, crackers, celery sticks, bell peppers, cucumbers, or other fresh vegetables for dipping.
Notes
- Drain the Rotel well to prevent the dip from becoming watery.
- For a smoother dip, blend the Rotel tomatoes into the cottage cheese mixture instead of folding it in.
- Enhance flavor and protein by adding cooked and crumbled turkey bacon or extra shredded cheese.
- Store the dip covered in the refrigerator for up to 3 days for best freshness.
