Ingredients

For the Wontons

  • 30 wonton wrappers
  • 8 ounces (225 g) ground pork
  • 2 green onions, finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove, minced
  • ½ teaspoon white pepper
  • 1 tablespoon cornstarch

For the Soup

  • 6 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 garlic cloves, minced
  • 1 cup sliced mushrooms (optional)
  • 2 cups baby bok choy, chopped
  • 2 green onions, sliced
  • Salt and black pepper, to taste


Instructions

  1. Make the filling: In a mixing bowl, combine the ground pork, finely chopped green onions, soy sauce, sesame oil, grated ginger, minced garlic, white pepper, and cornstarch until well mixed to create the wonton filling.
  2. Fill the wontons: Place about 1 teaspoon of the pork filling in the center of each wonton wrapper. Lightly moisten the edges with water, fold into a triangle, press to seal, then bring the two corners together and pinch to form a traditional wonton shape.
  3. Cook wontons: Bring a large pot of water to a gentle boil. Carefully add the wontons and cook for 3–4 minutes, or until they float to the surface and the filling is fully cooked. Remove the wontons using a slotted spoon and set aside.
  4. Prepare the soup base: In another pot, heat the chicken broth along with soy sauce, sesame oil, grated ginger, and minced garlic. Bring the broth to a gentle simmer.
  5. Add vegetables: Stir in the sliced mushrooms and cook for about 5 minutes. Then add the chopped baby bok choy and continue simmering for another 2–3 minutes until the vegetables are just tender.
  6. Combine wontons and soup: Add the cooked wontons into the simmering soup and heat together for 1 minute to meld flavors.
  7. Season and serve: Taste the soup and adjust seasoning with salt and black pepper as needed. Garnish with sliced green onions and serve hot.

Notes

  • Freeze uncooked wontons on a baking sheet, then transfer to a freezer bag for up to 3 months.
  • Cook frozen wontons directly from frozen, adding 1–2 extra minutes to the cooking time.
  • Ground chicken or shrimp can be substituted for the pork filling.
  • Add spinach, napa cabbage, or carrots to the soup for additional vegetables.
