Ingredients
Cookies
- 24 soft chocolate chip cookies (homemade or store-bought)
Ice Cream
- 1 quart (about 1 liter) vanilla ice cream, slightly softened
Toppings
- 1/2 cup mini chocolate chips
- 1/2 cup rainbow sprinkles
- 1/2 cup chopped nuts (optional)
- 1/4 cup mini chocolate candies (optional)
Instructions
- Soften Ice Cream: Allow the vanilla ice cream to soften at room temperature for 5–10 minutes until it becomes easy to scoop but not melted.
- Prepare Cookies for Filling: Arrange half of the soft chocolate chip cookies flat side up on a baking tray or flat surface to prepare for assembling the ice cream sandwiches.
- Add Ice Cream: Using a scoop or spoon, place about 1/4 cup of the softened ice cream onto each cookie, evenly spreading it to cover the cookie.
- Assemble Sandwiches: Place the remaining cookies on top of the ice cream scoops, flat side down, and gently press the cookies together to spread the ice cream evenly to the edges, creating a sandwich.
- Decorate Edges: Roll the exposed ice cream edges in mini chocolate chips, rainbow sprinkles, chopped nuts, or mini chocolate candies as desired to add texture and flavor.
- Freeze Sandwiches: Arrange the assembled ice cream sandwiches on a parchment-lined tray and freeze for at least 2 hours, until the ice cream is firm and the sandwiches hold their shape.
- Serve or Store: Serve the ice cream sandwiches immediately after freezing or wrap each one individually in plastic wrap and store in the freezer for up to 2 weeks for later enjoyment.
Notes
- Ensure the ice cream is softened just enough for easy scooping, but not melted, for best sandwich assembly.
- Freeze the assembled sandwiches completely before serving to prevent ice cream melting.
- Experiment with different cookie flavors such as chocolate, peanut butter, oatmeal, or sugar cookies for variety.
- Try various ice cream flavors like cookies and cream, mint chocolate chip, or strawberry to suit your taste preferences.
- Wrap each sandwich tightly in plastic wrap to maintain freshness and prevent freezer burn during storage.
