Ingredients
Chicken & Seasoning
- 2 lbs (900 g) boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 packet (1 ounce) ranch seasoning mix
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
Dairy & Cheese
- 8 ounces cream cheese, cut into cubes
- 1 cup shredded cheddar cheese
Bacon & Garnish
- 6 slices bacon, cooked and crumbled
- 3 green onions, sliced
Instructions
- Add the chicken: Place the chicken breasts in the Instant Pot. Pour the chicken broth over the chicken and sprinkle with the ranch seasoning, garlic powder, and black pepper.
- Pressure cook: Secure the lid and set the valve to Sealing. Cook on High Pressure for 15 minutes. Allow a natural pressure release for 5 minutes, then carefully release the remaining pressure.
- Shred the chicken: Remove the chicken and shred it thoroughly using two forks. Return the shredded chicken back to the Instant Pot.
- Add the cream cheese: Add the cubed cream cheese to the pot. Set the Instant Pot to Sauté mode and stir continuously until the cream cheese melts completely and the mixture becomes creamy.
- Add the cheese and bacon: Stir in the shredded cheddar cheese and most of the crumbled bacon. Cook for 1–2 minutes until the cheddar cheese is fully melted and incorporated.
- Finish and serve: Turn off the Instant Pot. Garnish with the remaining bacon and sliced green onions. Serve the dish warm.
Notes
- Cut very thick chicken breasts in half horizontally for more even cooking.
- Use softened cream cheese if possible to make melting easier.
- For extra flavor, add ½ teaspoon smoked paprika or a pinch of red pepper flakes.
- Serve over cauliflower rice, roasted vegetables, baked potatoes, rice, or low-carb wraps.
- Leftovers can be refrigerated in an airtight container for up to 4 days.
- If the mixture is too thick, stir in a small splash of the cooking broth to loosen it.
