Description

Instant Pot Korean Galbitang is a comforting Korean beef short rib soup featuring tender ribs simmered in a clear, flavorful broth with Korean radish and aromatic garlic. Utilizing the Instant Pot significantly reduces cooking time while preserving the traditional flavors of this hearty soup.

Ingredients

Main Ingredients

  • 2 pounds beef short ribs
  • 8 cups water
  • 1 Korean radish (or daikon), sliced
  • 4 cloves garlic, crushed
  • 2 green onions, chopped

Seasonings

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sesame oil

Instructions

  1. Prepare Ribs: Place beef short ribs in the Instant Pot and cover them with water. Use the sauté function to bring the water to a boil, then drain and rinse the ribs thoroughly to remove any impurities and scum for a clear broth.
  2. Add Ingredients: Return the clean ribs to the Instant Pot and add fresh 8 cups of water along with the sliced Korean radish and crushed garlic cloves.
  3. Pressure Cook: Seal the Instant Pot lid securely and set to cook on high pressure for 40 minutes, allowing the beef to become tender and flavors to meld.
  4. Release Pressure: After cooking finishes, allow the pressure to naturally release for 10 minutes before carefully opening the lid.
  5. Season Soup: Stir in the salt, black pepper, and sesame oil to season the broth perfectly.
  6. Garnish and Serve: Garnish the soup with the chopped green onions and serve hot, ideally alongside steamed rice and kimchi.

Notes

  • Serve with steamed rice and kimchi for an authentic Korean meal experience.
  • Skim excess fat from the broth before serving for a lighter soup.
  • Consider adding glass noodles to the soup for extra texture and heartiness.
