Ingredients

Meat and Oils

  • 1 lb Italian sausage, casings removed
  • 1 tbsp olive oil

  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 2 cups baby spinach

Beans and Tomatoes

  • 2 (15 oz) cans white beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes

Liquids and Broth

  • 6 cups chicken broth

Herbs and Seasonings

  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • Salt and black pepper, to taste

Garnish

  • Grated Parmesan cheese, for serving
  • Fresh parsley, chopped, for garnish


Instructions

  1. Heat olive oil: Heat olive oil in a large soup pot over medium heat.
  2. Cook sausage: Add the Italian sausage and cook until browned, breaking it into small pieces as it cooks.
  3. Sauté vegetables: Add onion, carrots, and celery to the pot. Cook for 5–6 minutes until softened.
  4. Add garlic: Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Add beans and liquids: Add the white beans, diced tomatoes, chicken broth, oregano, basil, and thyme to the pot.
  6. Simmer soup: Bring the soup to a boil, then reduce heat and simmer gently for 25 minutes to blend flavors.
  7. Add spinach: Stir in the baby spinach and cook for 2–3 minutes until wilted.
  8. Season to taste: Season the soup with salt and black pepper according to your preference.
  9. Serve: Ladle the soup into bowls and top with grated Parmesan cheese and fresh parsley. Serve hot, optionally with crusty bread.
