Ingredients

- 1 lb Italian sausage, casings removed
- 1 tbsp olive oil
Vegetables and Aromatics
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 2 cups baby spinach
Beans and Tomatoes
- 2 (15 oz) cans white beans, drained and rinsed
- 1 (14.5 oz) can diced tomatoes
Liquids and Broth
- 6 cups chicken broth
Herbs and Seasonings
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp dried thyme
- Salt and black pepper, to taste
Garnish
- Grated Parmesan cheese, for serving
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil: Heat olive oil in a large soup pot over medium heat.
- Cook sausage: Add the Italian sausage and cook until browned, breaking it into small pieces as it cooks.
- Sauté vegetables: Add onion, carrots, and celery to the pot. Cook for 5–6 minutes until softened.
- Add garlic: Stir in minced garlic and cook for 30 seconds until fragrant.
- Add beans and liquids: Add the white beans, diced tomatoes, chicken broth, oregano, basil, and thyme to the pot.
- Simmer soup: Bring the soup to a boil, then reduce heat and simmer gently for 25 minutes to blend flavors.
- Add spinach: Stir in the baby spinach and cook for 2–3 minutes until wilted.
- Season to taste: Season the soup with salt and black pepper according to your preference.
- Serve: Ladle the soup into bowls and top with grated Parmesan cheese and fresh parsley. Serve hot, optionally with crusty bread.
