Description

Keto Stuffing Recipe with Sausage is a flavorful, low-carb alternative to traditional bread-based stuffing. This savory side dish combines seasoned sausage, aromatic vegetables, fresh herbs, and cauliflower as a low-carb base, making it perfect for holiday meals like Thanksgiving or Christmas. Easy to prepare ahead and packed with rich flavors, it’s a hearty comfort food that fits a ketogenic diet.

Ingredients

Main Ingredients

  • 1 lb ground sausage
  • 1 medium head of cauliflower, chopped into small pieces
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 3 tbsp butter
  • 1 cup chicken broth
  • 2 large eggs

Herbs & Seasonings

  • 1 tbsp fresh sage, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp poultry seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Toppings

  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the stuffing mixture later.
  2. Prepare Cauliflower: Chop the cauliflower into small, rice-sized pieces for a low-carb stuffing base.
  3. Sauté Vegetables: Heat butter in a large skillet over medium heat. Add diced onion and celery, cooking until softened, about 5 minutes.
  4. Cook Sausage: Add ground sausage to the skillet with the vegetables. Brown the sausage thoroughly, breaking it apart as it cooks to ensure even cooking.
  5. Add Herbs and Seasonings: Stir in minced garlic, chopped sage, thyme, rosemary, poultry seasoning, salt, and black pepper. Cook this mixture until fragrant, about 2 minutes.
  6. Combine Cauliflower: Mix in the chopped cauliflower, stirring to combine with the sausage and vegetable mixture.
  7. Add Broth: Pour in chicken broth gradually, just enough to moisten the mixture without making it watery. Stir well and remove the skillet from heat.
  8. Incorporate Eggs: Allow the mixture to cool slightly, then stir in the eggs to bind the stuffing together.
  9. Transfer and Top: Transfer the stuffing mixture to a greased casserole dish. Sprinkle chopped pecans evenly over the top if using.
  10. Bake: Bake in the preheated oven for about 30-35 minutes or until the stuffing is set and golden around the edges.
  11. Garnish and Serve: Remove from the oven, garnish with fresh parsley, and serve warm as a comforting holiday side dish.
