Description

Kid-Friendly Confetti Rice is a colorful, simple, and delicious side dish made with fluffy long-grain rice, sweet corn, peas, carrots, and bell peppers. It offers a mild flavor perfect for children while providing a fun way to add vegetables to your family meals. This easy-to-make recipe features lightly toasted rice cooked in broth with a medley of vegetables, making it both nutritious and appealing for all ages.

Ingredients

Rice and Broth

  • 1½ cups long-grain white rice
  • 3 cups chicken or vegetable broth
  • 1 tablespoon butter or olive oil

Vegetables

  • ½ cup frozen peas
  • ½ cup corn kernels
  • ½ cup finely diced carrots
  • ½ cup finely diced red or yellow bell pepper
  • ¼ cup finely diced green onions

Seasonings

  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Herbs

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Rinse the Rice: Rinse the rice under cold water until the water runs mostly clear to remove excess starch and prevent clumping.
  2. Sauté Vegetables: Heat the butter or olive oil in a medium saucepan over medium heat. Add the diced carrots and bell pepper, cooking for 2–3 minutes until they start to soften.
  3. Toast the Rice: Stir in the rinsed rice and cook for 1 minute, stirring frequently to toast the grains lightly and enhance flavor.
  4. Add Broth and Seasonings: Pour in the broth, then add garlic powder, salt, and black pepper. Bring the mixture to a boil over medium-high heat.
  5. Simmer the Rice: Reduce heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is tender and the liquid has been fully absorbed.
  6. Rest the Rice: Remove the saucepan from heat and let the rice sit, covered, for 5 minutes to finish steaming.
  7. Add Remaining Vegetables and Herbs: Fluff the rice with a fork, then gently stir in the frozen peas, corn, green onions, and chopped parsley. Cover again and let sit for another 2–3 minutes to warm the vegetables through.
  8. Serve: Serve the colorful confetti rice warm as a vibrant and kid-friendly side dish to complement your meal.

Notes

  • Frozen vegetables work perfectly and make this recipe quick and convenient.
  • For younger children, dice the vegetables very finely to ensure easier eating.
  • You can substitute brown rice, but be sure to adjust the liquid amount and cooking time according to the package instructions.
  • For a cheesier twist, try adding shredded cheddar cheese once the rice is cooked and warm.
