- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 tablespoons poppy seeds
- 1 tablespoon fresh lemon zest
- 1½ cups buttermilk
- 2 tablespoons fresh lemon juice
- 2 large eggs
- 3 tablespoons melted unsalted butter
- 1 teaspoon vanilla extract
For Serving
- Maple syrup
- Fresh blueberries or strawberries
- Powdered sugar (optional)
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, poppy seeds, and lemon zest to evenly distribute all the dry components.
- Mix Wet Ingredients: In a separate bowl, whisk together the buttermilk, lemon juice, eggs, melted butter, and vanilla extract until fully combined and smooth.
- Combine Batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing to keep the pancakes tender and fluffy.
- Preheat Skillet: Heat a lightly greased nonstick skillet or griddle over medium heat to ensure even cooking and prevent sticking.
- Cook Pancakes: Pour about ¼ cup of batter per pancake onto the hot skillet. Cook for 2–3 minutes, until bubbles form on the surface and edges appear set.
- Flip Pancakes: Flip each pancake and cook for an additional 1–2 minutes until golden brown and cooked through.
- Serve: Serve pancakes warm topped with maple syrup, fresh berries, and a sprinkle of powdered sugar if desired.
