Description

Loaded Keto Cauliflower Mashed Potatoes provide a creamy, low-carb alternative to traditional mashed potatoes. This comforting dish is rich and cheesy with added savory flavors from crispy bacon, green onions, and fresh chives. Perfect as a satisfying side for steak, chicken, or roasted meats, it is simple to prepare, making it ideal for both holiday meals and weeknight dinners.

Ingredients

Cauliflower Mash

  • 1 large head of cauliflower, cut into florets
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter
  • 1/4 cup sour cream
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup shredded sharp cheddar cheese, divided

Toppings

  • 4 slices cooked bacon, crumbled
  • 2 green onions, thinly sliced
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Prepare Cauliflower: Cut the cauliflower into florets and steam or boil them until very tender, about 10-15 minutes. Drain thoroughly and let any excess moisture evaporate by leaving the cauliflower in the colander for a few minutes.
  2. Make the Mash: Transfer the cooked cauliflower into a food processor or a large mixing bowl. Add the softened cream cheese, butter, sour cream, minced garlic, Parmesan cheese, salt, and black pepper. Blend or mash the mixture until smooth and creamy, taking care not to over-process to avoid a gummy texture.
  3. Add Cheese: Stir in half of the shredded cheddar cheese gently into the cauliflower mash.
  4. Transfer to Baking Dish: If desired, transfer the cauliflower mash into a baking dish for topping and baking.
  5. Top the Mash: Sprinkle the remaining shredded cheddar cheese evenly over the top. Add crumbled cooked bacon and sliced green onions as additional toppings.
  6. Bake: Bake in a preheated oven at 350°F (175°C) for approximately 10-15 minutes or until hot and the cheese on top is melted and bubbly.
  7. Garnish and Serve: Remove from the oven, garnish with fresh chopped chives, and serve immediately while warm.

Notes

  • Ensure cauliflower is well-drained and steam-dried to prevent watery mash.
  • Use fresh cauliflower for best texture, but frozen cauliflower can be used if thoroughly drained after cooking.
  • Substitute sour cream with Greek yogurt for a tangier flavor and added protein.
  • Add jalapeños or use pepper jack cheese for a spicy variation.
  • Leftovers can be refrigerated for up to 4 days and reheated gently with added butter or cream if needed.
  • Cauliflower mash may freeze; cool completely and store in an airtight container. Expect a slight texture change.
  • Use a food processor or potato masher to achieve desired texture; avoid over-blending.
