Description

Low Carb Green Bean Casserole is a creamy, savory side dish that combines tender green beans, sautéed mushrooms, and a rich creamy sauce made with heavy cream, cream cheese, and Parmesan. Topped with a crispy, low-carb breadcrumb substitute made from almond flour and crushed pork rinds, this casserole offers a deliciously satisfying texture and flavor. Perfect for holiday meals like Thanksgiving or as a comforting everyday side, it delivers classic comfort with a lower carbohydrate twist.

Ingredients

Vegetables

  • 1 pound fresh green beans, trimmed
  • 8 ounces mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves

Dairy & Broth

  • 1/2 cup heavy cream
  • 4 ounces cream cheese
  • 1/2 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons butter

Fats & Oils

  • 1 tablespoon olive oil

Toppings

  • 1/4 cup almond flour
  • 1/2 cup crushed pork rinds

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven. Preheat your oven to 375°F (190°C) to prepare for baking the casserole later.
  2. Prepare Green Beans. Trim the ends of the fresh green beans thoroughly. Bring a large pot of water to a boil, then blanch the green beans for about 3-4 minutes until they are slightly tender but still crisp. Immediately transfer the beans to a bowl of ice water to stop the cooking process and preserve their bright green color. Drain and set aside.
  3. Sauté Vegetables. In a large skillet, heat the butter and olive oil over medium heat. Add the diced onions and sliced mushrooms, cooking until they are softened and lightly browned, about 5-7 minutes. Stir frequently to ensure even cooking.
  4. Add Flavorings. Stir in the minced garlic and fresh thyme leaves, cooking for another 1-2 minutes until fragrant but not browned.
  5. Create Creamy Sauce. Reduce heat to low and add the cream cheese and chicken broth to the skillet, stirring constantly until the cream cheese melts and combines smoothly. Then pour in the heavy cream and grated Parmesan cheese. Simmer gently, stirring occasionally, until the sauce thickens slightly, about 3-5 minutes. Season with salt and black pepper to taste.
  6. Combine Green Beans and Sauce. Thoroughly drain the blanched green beans and add them directly to the creamy mushroom sauce in the skillet. Stir gently to coat all the beans evenly with the sauce.
  7. Assemble Casserole. Grease a casserole dish lightly with butter or oil. Transfer the green bean and mushroom mixture into the dish, spreading it evenly.
  8. Prepare Topping. In a small bowl, combine the almond flour and crushed pork rinds to create a crunchy, low-carb topping.
  9. Add Topping and Bake. Sprinkle the almond flour and pork rind mixture evenly over the top of the casserole. Place the dish in the preheated oven and bake for approximately 20-25 minutes, until the casserole is bubbling and the topping is golden and crisp.
  10. Cool and Serve. Remove the casserole from the oven and allow it to cool slightly for 5 minutes before serving. This helps the sauce set a bit for better texture and easier serving.

Notes

  • You can add cooked bacon or pancetta for extra savory flavor.
  • Try cheddar or Gruyère cheese instead of Parmesan for variations in taste.
  • Add sliced almonds to the topping for additional crunch and flavor.
  • For a dairy-free version, substitute dairy-free cream alternatives and use nutritional yeast instead of cheese.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat leftovers in the oven for the best texture or microwave individual servings if preferred.
  • If using frozen green beans, thaw and drain them thoroughly before adding to the casserole.
  • Fresh or frozen green beans are preferred over canned for better texture.
  • To make ahead, assemble the casserole without the topping and refrigerate; add the topping just before baking.
  • Alternative toppings can include almond flour alone, crushed keto crackers, chopped nuts, or Parmesan cheese.
