Description

This Mediterranean Baked Chicken with Feta & Olives is a flavorful and easy-to-make dish featuring tender chicken breasts baked with tangy feta cheese, briny olives, and aromatic herbs. Perfect for a healthy weeknight dinner, this recipe combines vibrant Mediterranean flavors with a simple baking method that ensures juicy meat and a savory, cheesy topping.

Ingredients

Chicken & Marinade

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Juice of 1 lemon
  • Salt and black pepper, to taste

Toppings

  • 1 cup crumbled feta cheese
  • 1/2 cup pitted Kalamata olives, halved
  • 1/4 cup sun-dried tomatoes, chopped (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to ensure it reaches the correct temperature for baking the chicken evenly and thoroughly.
  2. Prepare the chicken: In a bowl, whisk together olive oil, minced garlic, dried oregano, lemon juice, salt, and pepper. Add the chicken breasts and coat them well with the marinade. Let it sit for 15 minutes to allow the flavors to meld.
  3. Arrange the chicken: Place the marinated chicken breasts in a baking dish in a single layer. Spread the crumbled feta evenly over each breast, then scatter the Kalamata olives and sun-dried tomatoes on top for added flavor.
  4. Bake: Put the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the chicken is cooked through and has reached an internal temperature of 165°F (74°C). The feta should be slightly golden and melting.
  5. Garnish and serve: Remove from the oven and sprinkle freshly chopped parsley over the dish before serving. This adds a refreshing color and herbaceous note to the meal.

Notes

  • For extra juiciness, marinate the chicken for 1 hour or overnight in the refrigerator.
  • Use fresh lemon juice for the best brightness and flavor.
  • Substitute chicken thighs if you prefer darker meat; adjust cooking time accordingly.
  • Serve with a side of roasted vegetables or a simple Greek salad for a complete meal.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
