Ingredients
For the Chickpeas
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Bowls
- 3 cups cooked quinoa or rice
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/2 cup crumbled feta cheese
- 1/2 cup hummus
- 1/4 cup fresh parsley, chopped
Lemon Dressing
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat and prepare chickpeas: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Season chickpeas: Pat the drained and rinsed chickpeas dry to remove excess moisture. Place them on the baking sheet and toss with olive oil, dried oregano, cumin, paprika, garlic powder, salt, and black pepper ensuring each chickpea is well coated.
- Roast chickpeas: Spread chickpeas out evenly on the sheet. Roast in the oven for 20–25 minutes, shaking the pan halfway through to promote even cooking, until they turn golden brown and develop a slightly crisp texture.
- Make the dressing: While chickpeas roast, combine extra-virgin olive oil, fresh lemon juice, Dijon mustard, minced garlic, dried oregano, salt, and black pepper in a small bowl. Whisk together until fully emulsified and set aside.
- Assemble bowls: Divide cooked quinoa or rice evenly among four serving bowls. Arrange diced cucumber, halved cherry tomatoes, thinly sliced red onion, Kalamata olives, and crumbled feta cheese neatly over the grains.
- Add chickpeas and hummus: Add the warm roasted chickpeas on top of the bowls, then add a spoonful of creamy hummus to each bowl for added flavor and creaminess.
- Dress and garnish: Drizzle the prepared lemon dressing evenly over each bowl and sprinkle with chopped fresh parsley for a bright, fresh finish.
- Serve: Serve the Mediterranean bowls immediately for the crispiest chickpeas and best texture experience.
Notes
- Use quinoa, brown rice, white rice, or couscous as the base grain to suit your preference.
- For a vegan version, omit the feta cheese or substitute with a plant-based cheese alternative.
- Add avocado slices, roasted red peppers, or shredded cabbage for extra flavor and variety.
- For meal prep, store components like grains, vegetables, and chickpeas separately to maintain freshness.
- Roasted chickpeas lose their crispness over time, so they are best served immediately after roasting.
