Instructions
- Season the Chicken: In a bowl, combine chicken pieces with chili powder, ground cumin, paprika, garlic powder, onion powder, salt, and black pepper, ensuring each piece is evenly coated with the spices.
- Brown the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned on all sides, approximately 5-7 minutes. Remove the chicken from the skillet and set aside.
- Sauté Onion and Garlic: Using the same skillet, add diced onion and sauté for 3 to 4 minutes until softened. Add minced garlic and cook for an additional 30 seconds until fragrant.
- Toast the Rice: Stir the long-grain white rice into the skillet with the onions and garlic. Toast the rice for about 1 minute, stirring frequently to coat it evenly and enhance its flavor.
- Add Liquids and Tomatoes: Pour in the chicken broth and canned diced tomatoes along with their juices. Stir to combine all ingredients well.
