Ingredients

- 1½ cups old-fashioned oats
- 1/4 cup ground flaxseed
- 1/4 cup mini chocolate chips
- 1 tablespoon chia seeds (optional)
- Pinch of salt
Wet Ingredients
- 1/2 cup peanut butter
- 1/3 cup honey
- 1 teaspoon vanilla extract
Instructions
- Combine ingredients: In a large bowl, add the oats, ground flaxseed, mini chocolate chips, chia seeds if using, and a pinch of salt. Then add the peanut butter, honey, and vanilla extract to the bowl.
- Mix thoroughly: Stir all the ingredients together until the mixture is well combined and sticky enough to hold its shape. Ensure even distribution of all components.
- Chill mixture: Place the bowl in the refrigerator and chill the mixture for 20 to 30 minutes. This helps firm up the mixture, making it easier to roll.
- Form balls: Once chilled, use your hands to roll the mixture into 1-inch diameter balls. Make sure they are compact and hold together well.
- Refrigerate to set: Put the energy balls back into the fridge until you’re ready to serve or store them. This keeps them firm and fresh.
