Ingredients

- 8 oz (225 g) cream cheese, softened
- ½ cup (1 stick / 115 g) unsalted butter, softened
- 3 cups (360 g) powdered sugar, sifted
- 1 tsp vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan to ensure the bars don’t stick.
- Mix Wet Ingredients: In a large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until the mixture is smooth. Add the eggs one at a time, beating well after each addition. Then mix in the pumpkin purée thoroughly.
- Prepare Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger until evenly combined.
- Combine Mixtures: Gradually fold the dry ingredients into the wet pumpkin mixture gently until just combined. Avoid overmixing to keep the bars moist and tender.
