Description

This Quick and Easy Taco Mac and Cheese combines creamy elbow macaroni with seasoned ground beef, melted cheddar cheese, and classic taco flavors for a comforting and flavorful one-pot meal perfect for busy weeknights or family dinners.

Ingredients

Pasta

  • 12 oz elbow macaroni

Meat and Seasonings

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 packet taco seasoning (about 1 oz)

Liquids and Dairy

  • 1 cup beef broth
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • ½ cup cream or milk

Garnish

  • Chopped cilantro (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil, then add the elbow macaroni. Cook until al dente, about 8-10 minutes, then drain and set aside.
  2. Brown the ground beef: In a large skillet or saucepan, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until fully browned and no longer pink, about 5-7 minutes. Drain any excess fat.
  3. Combine taco seasoning and liquids: Stir in the taco seasoning packet, beef broth, and salsa into the browned beef. Mix well and bring the mixture to a gentle simmer to let flavors meld, about 3-5 minutes.
  4. Add cooked macaroni: Pour the drained macaroni into the beef mixture and stir to fully combine so the pasta absorbs some of the sauce.
  5. Finish with cream and cheese: Lower heat to medium-low and stir in the cream (or milk) and shredded cheddar cheese. Continue stirring until the cheese is melted and creamy, about 2-3 minutes. Ensure the dish is heated through but do not let it boil.
  6. Garnish and serve: Remove from heat and sprinkle chopped cilantro on top if desired. Serve immediately while warm and creamy.

Notes

  • Add black beans or corn for extra texture and nutrition.
  • Top with sour cream or diced avocado for added creaminess.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on stovetop or microwave with a splash of milk to restore creaminess.
