Instructions
- Cook the pasta: Bring a large pot of salted water to a boil, then add the elbow macaroni. Cook until al dente, about 8-10 minutes, then drain and set aside.
- Brown the ground beef: In a large skillet or saucepan, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until fully browned and no longer pink, about 5-7 minutes. Drain any excess fat.
- Combine taco seasoning and liquids: Stir in the taco seasoning packet, beef broth, and salsa into the browned beef. Mix well and bring the mixture to a gentle simmer to let flavors meld, about 3-5 minutes.
- Add cooked macaroni: Pour the drained macaroni into the beef mixture and stir to fully combine so the pasta absorbs some of the sauce.
- Finish with cream and cheese: Lower heat to medium-low and stir in the cream (or milk) and shredded cheddar cheese. Continue stirring until the cheese is melted and creamy, about 2-3 minutes. Ensure the dish is heated through but do not let it boil.
- Garnish and serve: Remove from heat and sprinkle chopped cilantro on top if desired. Serve immediately while warm and creamy.
