Ingredients
Salad
- 5 cups finely shredded red cabbage
- 2 apples, thinly sliced
- 1/2 cup walnuts, toasted and chopped
- 1/4 small red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp dried cranberries (optional)
Dressing
- 3 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1/2 tsp dried thyme
- Salt and black pepper to taste
Instructions
- Combine Salad Ingredients: Add the finely shredded red cabbage, thinly sliced apples, thinly sliced red onion, chopped fresh parsley, toasted and chopped walnuts, and dried cranberries (if using) into a large mixing bowl.
- Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, apple cider vinegar, honey, Dijon mustard, dried thyme, salt, and black pepper until well emulsified.
- Dress the Salad: Pour the prepared dressing over the salad ingredients in the large bowl.
- Toss to Coat: Thoroughly toss the salad to ensure all components are evenly coated with the vinaigrette.
- Let It Rest: Allow the salad to rest for 10 to 15 minutes before serving to let the flavors meld and the cabbage soften slightly.
Notes
- Massage the cabbage gently with the dressing to soften its texture and reduce bitterness.
- Use green apples like Granny Smith for a more tart flavor if preferred.
- For added creaminess, consider topping the salad with crumbled goat cheese or feta cheese.
