Ingredients
Beet Salad
- 4 medium beets, peeled and quartered
- 5 cups mixed greens or arugula
- 2 oranges, peeled and segmented
- 120 g feta cheese, crumbled
- 1/3 cup walnuts, toasted
- 2 tbsp olive oil
- Salt and black pepper to taste
Citrus Vinaigrette
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh orange juice
- 1 tbsp fresh lemon juice
- 1 tsp honey
- 1 tsp Dijon mustard
- 1/2 tsp orange zest
- Salt and black pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 200°C (about 400°F) to prepare for roasting the beets.
- Prepare Beets: Place the peeled and quartered beets on a baking sheet. Toss them with olive oil, salt, and black pepper to evenly coat the beet pieces for roasting.
