Vegetables
- 1 large head cauliflower, cut into florets
- 300 g mushrooms, halved
Seasoning & Herbs
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and black pepper to taste
Finishing Touches
- 1/3 cup grated Parmesan
- 1 tbsp fresh lemon juice
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat the oven: Set your oven to 220°C (430°F) to ensure it is properly heated for roasting the vegetables.
- Prepare the vegetables: Spread the cauliflower florets and halved mushrooms onto a large baking sheet, ensuring they are evenly distributed.
- Toss with seasoning: Add olive oil, minced garlic, dried thyme, Italian seasoning, paprika, salt, and pepper over the vegetables. Toss thoroughly until all pieces are fully coated with the seasoning mixture.
- Arrange for roasting: Spread the seasoned vegetables in a single layer on the baking sheet to promote even roasting and caramelization.
- Roast the vegetables: Place the baking sheet in the preheated oven and roast for 25–30 minutes. Stir halfway through cooking to ensure even browning.
- Add Parmesan: During the last 5 minutes of roasting, sprinkle grated Parmesan evenly over the vegetables to allow it to melt and create a savory crust.
- Finish and serve: Remove the baking sheet from the oven, drizzle the roasted vegetables with fresh lemon juice, garnish with chopped fresh parsley, and serve warm.
Notes
- Avoid overcrowding the baking sheet to ensure better browning and caramelization of the vegetables.
- Add red pepper flakes if you prefer a spicy kick.
- For a vegan version, omit the Parmesan cheese or substitute with a vegan alternative.
