- 1 small onion, chopped
- 3 cups vegetable or chicken broth
- 1 cup shredded cheddar cheese
- 1 cup milk or cream
- Salt and pepper to taste

- Chives or parsley for garnish
Instructions
- Preheat Oven: Preheat your oven to 200°C (400°F) to prepare for roasting the cauliflower and garlic.
- Prepare Vegetables: Toss the cauliflower florets with olive oil, salt, and pepper to evenly coat them for roasting.
- Prepare Garlic: Cut the top off the garlic head, drizzle it with olive oil, then wrap it tightly in aluminum foil for roasting.
- Roast: Place both the cauliflower and wrapped garlic on a baking tray and roast in the oven for 25–30 minutes until they are tender and golden brown.
- Sauté Onion: While vegetables are roasting, heat a pot on the stovetop and sauté the chopped onion until soft and translucent.
- Add Roasted Ingredients: Remove the roasted garlic cloves from their skins and add them along with the roasted cauliflower to the pot with the sautéed onion.
- Simmer: Pour in the broth and simmer the mixture for 10 minutes to combine the flavors.
- Blend Soup: Use an immersion blender or transfer the mixture to a blender and blend until the soup is completely smooth and creamy.
- Add Dairy and Cheese: Stir in the milk or cream and shredded cheddar cheese, stirring continuously until the cheese is melted and incorporated.
- Season and Serve: Taste and adjust seasoning with salt and pepper if needed. Serve the soup warm, garnished with chives or parsley if desired.
Notes
- Use sharp cheddar cheese for a more pronounced cheesy flavor.
- Adding a pinch of paprika can add an extra depth of flavor to the soup.
- Opting for milk instead of cream will make the soup lighter without sacrificing creaminess.
