Ingredients

  • 3 ripe peaches, halved and pitted
  • 5 ounces baby arugula
  • Fresh basil leaves, for garnish

  • ¼ cup basil pesto
  • ¼ cup toasted pine nuts or chopped pistachios

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for roasting the peaches.
  2. Prepare Peaches: Brush the peach halves with olive oil, ensuring they are coated well. Place them cut-side up on a baking sheet.
  3. Roast Peaches: Roast peaches in the oven for 15–18 minutes until they become tender and lightly caramelized. Remove from oven and allow to cool slightly before slicing.
  4. Assemble Greens: Arrange the baby arugula evenly on a large serving platter as the base of the salad.
  5. Add Burrata: Tear the burrata cheese into pieces by hand and scatter over the arugula.
  6. Add Roasted Peaches: Place the sliced roasted peaches on top of the burrata and greens.
  7. Add Pesto: Spoon the basil pesto evenly over the salad to infuse fresh herb flavor.
