Description

Tender roasted red cabbage wedges with caramelized edges, infused with garlic, olive oil, and herbs. This simple, colorful, and flavorful side dish is perfect for adding a healthy and vibrant touch to any meal.

Ingredients

Vegetables

  • 1 large head red cabbage

Seasoning & Dressing

  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1/2 tsp smoked paprika
  • 1 tbsp balsamic vinegar
  • Salt and black pepper, to taste

Garnish

  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven: Set your oven to 220°C (428°F) to prepare for roasting the cabbage.
  2. Prepare the cabbage: Remove the outer leaves of the red cabbage and cut it into thick wedges to keep them intact during roasting.
  3. Arrange cabbage wedges: Place the cabbage wedges evenly on a baking sheet lined with parchment paper or a silicone baking mat for easy cleanup.
  4. Make the seasoning mixture: In a small bowl, mix olive oil, minced garlic, dried thyme, smoked paprika, salt, and black pepper thoroughly.
  5. Brush the cabbage: Generously coat both sides of each cabbage wedge with the prepared olive oil and seasoning mixture to ensure flavorful roasting.
  6. Roast the cabbage: Place the baking sheet in the oven and roast the cabbage for 20 to 25 minutes, turning the wedges carefully halfway through to allow even caramelization.
  7. Add balsamic vinegar: Drizzle the balsamic vinegar over the cabbage during the last 5 minutes of roasting to enhance depth and sweetness.
  8. Garnish and serve: Once roasted to tender perfection with caramelized edges, sprinkle chopped fresh parsley on top and serve warm as a vibrant side dish.

Notes

  • Cut the cabbage wedges thick enough to hold together during roasting and prevent them from falling apart.
  • Add grated Parmesan or crumbled feta cheese prior to serving for an extra burst of flavor.
  • A squeeze of fresh lemon juice brightens the dish and adds appealing freshness.
