Ingredients
Meat and Vegetables
- 1 lb beef stew meat
- 2 cups mushrooms, sliced
- 2 carrots, diced
- 2 potatoes, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
Liquids and Seasonings
- 2 tablespoons olive oil
- 4 cups beef broth
- 1/2 cup red wine (optional)
- 2 tablespoons flour
- 1 teaspoon thyme
- 1 bay leaf
- Salt and black pepper to taste
Instructions
- Heat oil: In a large pot over medium heat, warm the olive oil until shimmering.
- Brown beef: Add the beef stew meat and brown on all sides to seal in juices and add flavor, about 5-7 minutes.
- Sauté aromatics: Add the chopped onion and minced garlic to the pot and cook until softened and fragrant, about 3-4 minutes.
- Add flour: Sprinkle the flour over the meat and vegetables, stirring well to combine. Cook for 1 minute to remove the raw flour taste.
- Deglaze and add liquids: Gradually pour in the beef broth and red wine while stirring to create a smooth sauce without lumps.
- Add vegetables and herbs: Stir in sliced mushrooms, diced carrots, diced potatoes, thyme, and bay leaf.
- Simmer: Bring the stew to a gentle simmer. Cover the pot and cook slowly for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the flavors have melded.
- Finish and serve: Remove the bay leaf, season with salt and black pepper to taste, and serve the stew warm.
Notes
- Slow cooking enhances flavor and tenderness, making the beef melt-in-your-mouth.
- Using fresh mushrooms provides the best texture and Earthy flavor.
- Adjust the stew’s thickness by adding more broth if it becomes too thick during cooking.
