Description

These Savory Seafood Foil Packets with Old Bay combine succulent shrimp, smoky sausage, tender potatoes, and sweet corn, all coated in a buttery, zesty Old Bay seasoning blend. Perfectly cooked on the grill or baked in the oven, this easy, mess-free dinner delivers bold coastal flavors ideal for a quick weeknight meal or a casual gathering.

Ingredients

Seafood and Sausage

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 12 oz smoked sausage, sliced

Vegetables

  • 1 lb baby potatoes, halved and parboiled
  • 2 ears corn, cut into 4 pieces

Seasoning and Sauce

  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons Old Bay seasoning
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • Lemon wedges, for serving

Instructions

  1. Preheat the grill or oven. Set your grill to medium-high heat or preheat the oven to 400°F (200°C) to prepare for cooking the foil packets.
  2. Assemble the packets. Distribute shrimp, smoked sausage slices, parboiled baby potatoes, and corn pieces evenly among four large sheets of heavy-duty aluminum foil.
  3. Prepare the butter mixture. In a small bowl, combine melted butter, Old Bay seasoning, garlic powder, and lemon juice, mixing well to create a flavorful sauce.
  4. Add the seasoning. Drizzle the prepared butter mixture evenly over each foil packet, ensuring all ingredients are well coated.
  5. Seal the packets. Fold the foil tightly to create sealed packets, which will steam and cook the seafood and vegetables properly.
  6. Cook the packets. Place the foil packets on the grill or in the preheated oven, and cook for 18–20 minutes, or until shrimp are pink and cooked through and potatoes are tender when pierced with a fork.
  7. Serve. Carefully open the foil packets to avoid steam burns, garnish each with chopped fresh parsley, and serve with lemon wedges on the side for added zest.

Notes

  • Add crab legs or clams to the packets for an extra-special seafood feast.
  • Use heavy-duty aluminum foil to prevent leaks during cooking and to keep all flavors sealed inside.
  • Serve with crusty bread to soak up the buttery, seasoned juices left in the foil packet.
