Ingredients
Shrimp and Eggs
- 1 lb (450 g) large shrimp, peeled and deveined
- 2 eggs, beaten
Vegetables and Aromatics
- 1 cup frozen peas and carrots
- 3 green onions, sliced
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
Rice and Oils
- 3 cups cooked cold jasmine rice
- 2 tbsp vegetable oil
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- Black pepper, to taste
Instructions
- Heat oil: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat to prepare for cooking the shrimp.
- Cook shrimp: Add the shrimp to the hot skillet and cook for 2–3 minutes per side until they turn pink and opaque. Remove the shrimp from the pan and set aside.
- Scramble eggs: Add the remaining 1 tablespoon of vegetable oil to the pan and pour in the beaten eggs. Scramble the eggs until just cooked and then transfer them to a plate for later use.
- Sauté vegetables and aromatics: In the same pan, add garlic, fresh ginger, and the frozen peas and carrots. Sauté for 2–3 minutes until the vegetables are warmed through and fragrant.
- Add rice: Add the cold jasmine rice to the pan and stir-fry for 3–4 minutes, breaking up any clumps to ensure even heating and mixing with the vegetables.
- Season rice: Stir in the soy sauce and sesame oil evenly to coat the rice and vegetables thoroughly with the savory sauce.
- Combine shrimp and eggs: Return the cooked shrimp and scrambled eggs to the skillet and toss everything together, cooking for an additional 1–2 minutes to heat through and blend flavors.
- Garnish and serve: Garnish the shrimp fried rice with sliced green onions. Serve hot immediately for best flavor and texture.
Notes
- Use cold, day-old rice for best texture; fresh hot rice can become mushy.
- Add diced bell peppers or mushrooms to increase vegetable variety and nutrition.
- Adjust the amount of soy sauce to suit your taste preferences or dietary needs.
