Instructions

  1. Prepare Sushi Rice: Combine the warm cooked short-grain rice with rice vinegar, sugar, and salt. Stir gently to evenly season the rice, then set aside to cool slightly.
  2. Season Shrimp: Pat the peeled and deveined shrimp dry with a paper towel. Place them in a bowl and add soy sauce, sesame oil, garlic powder, and freshly grated ginger. Toss thoroughly to coat the shrimp evenly with the marinade.
  3. Cook Shrimp: Heat neutral cooking oil in a large skillet over medium-high heat. Arrange shrimp in a single layer and sear for 2–3 minutes on each side until they turn pink, become opaque, and are fully cooked through.
  4. Make Spicy Mayonnaise: In a small bowl, whisk together Japanese mayonnaise, sriracha (adjust to your preferred spice level), and lime juice to create a creamy, tangy sauce.
  5. Assemble Bowls: Divide the seasoned sushi rice evenly among four serving bowls. Neatly arrange cooked shrimp, sliced avocado, diced cucumber, shredded carrots, and shelled edamame on top of the rice.
