Ingredients
Soup Base
- 1 tbsp butter or olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 medium potatoes, diced
- 3 cups vegetable broth
Final Touches
- 1 cup milk or cream
- Salt and pepper to taste
- Optional: thyme or parsley for garnish
Instructions
- Sauté Aromatics: Heat butter or olive oil in a pot over medium heat and sauté the chopped onion and minced garlic until they soften and become fragrant, about 3-4 minutes.
- Cook Mushrooms: Add the sliced mushrooms to the pot and cook until they release their moisture and begin to brown slightly, around 5-6 minutes.
- Add Potatoes and Broth: Stir in diced potatoes and pour in the vegetable broth. Bring the mixture to a boil to start the cooking process.
- Simmer Until Tender: Reduce the heat and simmer the soup for 15 to 20 minutes, or until the potatoes are tender and easily pierced with a fork.
- Blend Soup: Use an immersion blender to blend the soup to your desired texture, either completely smooth or leaving some chunks for texture.
- Finish with Cream: Stir in the milk or cream to add richness and creaminess to the soup.
- Season and Serve: Season the soup with salt and pepper to taste. Garnish with optional thyme or parsley if desired, and serve warm.
