Beef Mixture

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • ½ cup diced tomatoes

  • 2 cups red enchilada sauce, divided
  • 6 small flour or corn tortillas, cut into strips
  • 1½ cups shredded Mexican blend cheese
  • 2 green onions, sliced

Instructions

  1. Preheat and Brown Beef: Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the ground beef and diced onion, cooking for 6–8 minutes while breaking up the beef until browned and the onion is softened.
  2. Add Garlic and Seasoning: Stir in the minced garlic and taco seasoning, cooking for about 30 seconds to release their aromas.
  3. Combine Beans, Veggies and Sauce: Mix in the black beans, corn kernels, diced tomatoes, and 1 cup of the red enchilada sauce, ensuring everything is evenly incorporated.
  4. Add Tortilla Strips: Gently fold the tortilla strips into the beef mixture to allow them to soak up the flavors.
  5. Top with Sauce and Cheese: Pour the remaining 1 cup of enchilada sauce evenly over the skillet mixture, then sprinkle the shredded Mexican blend cheese on top.
  6. Melt Cheese and Soften Tortillas: Reduce the heat to low, cover the skillet, and cook for 5–7 minutes until the tortillas soften and the cheese melts. Alternatively, place the uncovered skillet under the broiler for 2–3 minutes until bubbly and golden.
