Description

These Slow Cooker Falafel-Inspired Chickpeas are a flavorful and tender Mediterranean dish featuring garlic, cumin, coriander, parsley, and lemon. Slow cooking ensures the chickpeas absorb the spices deeply, making them perfect for serving in pita, over grains, or alongside fresh salads for a wholesome vegan meal.

Ingredients

Chickpeas Mixture

  • 3 cans (15 oz each) chickpeas, drained and rinsed
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1 cup vegetable broth
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • ½ tsp turmeric
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper, optional
  • ½ cup fresh parsley, chopped
  • ¼ cup fresh cilantro, chopped

For Serving

  • Warm pita bread
  • Tahini sauce
  • Diced cucumber and tomatoes
  • Pickled red onions
  • Fresh parsley
  • Lemon wedges

Instructions

  1. Combine Ingredients: Add the chickpeas, onion, garlic, vegetable broth, olive oil, lemon juice, cumin, coriander, smoked paprika, turmeric, salt, black pepper, and cayenne pepper to the slow cooker. Stir well to evenly distribute the seasonings throughout the mixture.
  2. Slow Cook: Cover the slow cooker and cook on LOW for 4–5 hours or on HIGH for 2–3 hours. This slow cooking allows the chickpeas to become tender and deeply infused with the Mediterranean flavors.
  3. Add Fresh Herbs: During the final 15 minutes of cooking, stir in the chopped parsley and cilantro to brighten the dish with fresh herbal notes.
  4. Mash Chickpeas (Optional): For a creamier texture resembling falafel, mash about 1 cup of the chickpeas against the side of the slow cooker and stir them back into the mixture to thicken and bind it slightly.
  5. Adjust Seasoning: Taste the chickpea mixture and adjust the lemon juice, salt, or spices as needed to balance the flavors perfectly.
  6. Serve: Serve the warm falafel-inspired chickpeas tucked inside warm pita bread with tahini sauce, diced cucumber and tomatoes, pickled red onions, extra fresh parsley, and lemon wedges for squeezing.

Notes

  • Canned chickpeas are preferred as they retain shape while absorbing flavors well.
  • For a crispier, more traditional falafel-style finish, spread the cooked chickpeas on a baking sheet and roast at 425°F for 15–20 minutes.
  • This dish also pairs wonderfully served over quinoa, couscous, or rice for a hearty grain bowl.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
