Ingredients
Tofu and Vegetables
- 14 oz (400 g) extra-firm tofu, pressed and crumbled
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 small onion, chopped
Sauce and Seasonings
- 2 chipotle peppers in adobo sauce
- 2 tablespoons adobo sauce
- 2 tablespoons tomato paste
- ½ cup vegetable broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
Instructions
- Heat the oil: Warm 1 tablespoon of olive oil in a skillet over medium heat to prepare for sautéing.
- Sauté onion and garlic: Add the chopped onion to the skillet and cook until softened, about 3–5 minutes, then add the minced garlic and cook for an additional minute until fragrant.
- Prepare the sauce: In a blender, combine 2 chipotle peppers in adobo sauce, 2 tablespoons adobo sauce, 2 tablespoons tomato paste, ½ cup vegetable broth, 1 teaspoon cumin, 1 teaspoon smoked paprika, 1 teaspoon oregano, 1 tablespoon soy sauce, and 1 tablespoon lime juice. Blend until smooth and well combined.
- Add tofu to skillet: Add the crumbled pressed tofu to the skillet with the sautéed onions and garlic, stirring to combine.
- Pour in sauce and simmer: Pour the blended sauce over the tofu mixture, stirring to coat evenly. Reduce heat to low and simmer for 15–20 minutes, stirring occasionally, until the liquid reduces and the flavors meld together.
