Description

Soy & Agave Tofu Noodles combine crispy tofu with tender noodles in a sweet and savory sauce made from soy sauce, agave syrup, garlic, and ginger. This quick and satisfying plant-based meal is perfect for busy weeknights, offering a delicious balance of textures and flavors in every bite.

Ingredients

Noodles

  • 8 ounces (225 g) rice noodles or ramen noodles

Tofu and Sauce

  • 14 ounces (400 g) extra-firm tofu, cubed
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 3 tablespoons soy sauce
  • 2 tablespoons agave syrup
  • 1 tablespoon rice vinegar

Garnish

  • 1 teaspoon sesame seeds
  • 2 green onions, sliced

Instructions

  1. Cook noodles: Prepare the noodles according to the package instructions, then drain and set aside.
  2. Coat tofu: Toss the cubed tofu with cornstarch evenly to help it crisp up when cooked.
  3. Fry tofu: Heat sesame oil in a skillet over medium heat. Add tofu and cook until golden brown and crispy on all sides, about 5-7 minutes.
  4. Add aromatics: Add the minced garlic and grated ginger to the skillet with tofu and sauté for about 30 seconds until fragrant.
  5. Make sauce: Stir together soy sauce, agave syrup, and rice vinegar, then pour this mixture into the skillet with tofu. Cook for a few minutes until the sauce slightly thickens, coating the tofu.
  6. Toss noodles: Add the cooked noodles into the skillet and toss gently until noodles are evenly coated with the sauce and tofu.
  7. Garnish and serve: Sprinkle sesame seeds and sliced green onions over the top before serving warm.

Notes

  • Feel free to add vegetables like broccoli, bell peppers, or snap peas for extra nutrition and color.
  • Add a spicy kick by incorporating sriracha or chili flakes to the sauce.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
