Salad

  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1 tablespoon olive oil

  • 6 cups chopped kale
  • 1 cup shredded carrots

Lemon Dressing

Instructions

  3. Prepare Dressing: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey or maple syrup, minced garlic, salt, and pepper until fully combined and emulsified.
  4. Combine Salad Ingredients: In the bowl with the massaged kale, add shredded carrots, diced cucumber, halved cherry tomatoes, sliced red onion, and roasted pumpkin seeds. Toss together to mix the vegetables evenly.
  5. Add Chickpeas and Feta: Once chickpeas are roasted and crisp, add them to the salad bowl along with the crumbled feta cheese if using.
