Description
A warm and comforting spiced pumpkin and apple soup, perfect for cozy fall days, combining the natural sweetness of apples and pumpkin with aromatic cinnamon and nutmeg.
Ingredients
Base Ingredients
- 2 tbsp butter
- 1 onion, diced
- 2 apples, peeled & chopped
Main
- 3 cups pumpkin purée
- 4 cups vegetable broth
Spices and Cream
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup cream or coconut milk
Instructions
- Sauté onion and apples: In a large pot, melt the butter over medium heat. Add the diced onion and chopped apples and sauté until the onions are translucent and the apples have softened, about 5-7 minutes.
- Add pumpkin and spices: Stir in the pumpkin purée along with the vegetable broth, cinnamon, and nutmeg, mixing well to combine all the flavors evenly.
- Simmer the soup: Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 15 minutes to allow the flavors to meld together and the soup to thicken slightly.
- Blend until smooth: Use an immersion blender or transfer the soup in batches to a blender and process until smooth and creamy.
- Finish with cream: Return the blended soup to the pot, stir in the cream or coconut milk, and heat through without boiling. Adjust seasoning if needed, then serve hot.
Notes
- For a vegan alternative, use coconut oil instead of butter and coconut milk instead of cream.
- Adjust the thickness by modifying the amount of vegetable broth according to your preference.
- Add a pinch of salt and pepper to enhance flavors.
- Garnish with toasted pumpkin seeds or a swirl of cream for a decorative touch.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
