Ingredients

Noodles

  • 8 oz noodles, such as ramen, udon, or soba

Sauce

  • 2 tbsp white miso paste
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 12 tsp chili crisp or chili oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 23 tbsp reserved noodle water

Garnish

  • 2 green onions, sliced
  • 1 tbsp sesame seeds


Instructions

  1. Cook the noodles: Cook the noodles according to package directions. Reserve a few tablespoons of the cooking water, then drain the noodles thoroughly.
  2. Prepare the sauce: In a small bowl, whisk together the miso paste, soy sauce, sesame oil, rice vinegar, honey or maple syrup, chili crisp or chili oil, minced garlic, and grated ginger until well combined.
  3. Adjust sauce consistency: Gradually add the reserved noodle water to the sauce mixture, whisking continuously until the sauce is smooth and a pourable consistency is achieved.
  4. Toss noodles with sauce: Place the cooked noodles in a large skillet over low heat. Pour the prepared miso sauce over the noodles and toss gently to coat evenly.
  5. Heat through: Cook the noodles and sauce together for 1 to 2 minutes, stirring frequently. Add more reserved noodle water as needed to loosen the sauce and prevent sticking. Avoid boiling to preserve the delicate flavors.
  6. Garnish and serve: Remove from heat. Garnish with sliced green onions and sesame seeds. Serve immediately for best flavor and texture.

Notes

  • Use more or less chili crisp depending on your preferred spice level.
  • Add sautéed mushrooms, spinach, broccoli, or bok choy for extra vegetables.
  • Top with a fried egg, tofu, chicken, or shrimp for additional protein.
