- 1 tbsp tomato ketchup
- 1 tsp lemon juice
For Assembly
- 4 whole wheat rotis or wraps
- 1 onion, thinly sliced
- 1 cup shredded cabbage
- 1 carrot, grated
- Fresh cilantro, chopped
- Mint chutney
- Mayonnaise (optional)
Instructions
- Prepare the Paneer: Heat oil in a pan over medium heat and sauté the ginger-garlic paste until fragrant, about 1 minute.
- Add Spices: Mix in red chili powder, turmeric, coriander powder, cumin powder, garam masala, and salt; cook while stirring for 30 seconds to release their aromas.
- Cook the Paneer: Add the paneer strips to the pan and gently toss to coat with the spices without breaking the pieces.
- Finish the Paneer: Stir in tomato ketchup and lemon juice, cooking the mixture for 3 to 4 minutes until paneer is well coated and heated through.
- Prepare the Rotis: Warm the whole wheat rotis until soft and pliable, either on a skillet or tawa over medium heat.
- Assemble the Frankie: Spread a generous layer of mint chutney over each roti, then layer with the spicy paneer, sliced onion, shredded cabbage, grated carrot, and chopped cilantro.
- Optional Topping: Drizzle mayonnaise over the filling for creaminess and extra flavor, if desired.
- Roll and Serve: Roll the roti tightly around the filling to form a wrap; serve immediately while warm and fresh.
